Mushy Peas with Mint and Lemon
A non-traditional take on the classic accompaniment for fish ‘n chips
Mushy peas are best pals with fish ‘n chips. But they also make a great sidekick for grilled or roasted meats, fowl, or other seafood.
Our recipe uses frozen peas (instead of dried), then adds mint and lemon. This all adds a bit of freshness and zip – and makes for quicker preparation.
So this dish is perfect for a weeknight meal. And good enough for company.

Moroccan-Spiced Cucumber and Chickpea Salad

We had planned to visit Morocco in person later this year. Looks like that won’t be happening, so we’ll have to travel virtually – with the assistance of our recipe collection.

The Gin-Gin Mule Cocktail
Mint and ginger spice up this modern classic
Mules, we’ve heard, like to boast that their ancestors were horses. And true to form, this drink descends from some thoroughbred cocktails (more on that later).
But right now, you need to slake your thirst, no? So let’s mix up this refresher.

Strawberry-Chipotle Soup with Mint
Fresh OJ adds brightness to this chilled starter
Soup is cool. And in this case, chilled. Which is perfect for the warm weather we’re having in our part of the world.
We particularly like this dish because it allows us to use some of the fresh, ripe strawberries that are showing up in our market. Fruit is inherently sweet, of course. But add a bit of sourness (balsamic vinegar) and spicy heat (chipotle), and you have a savory starter.
Best of all, you can make this dish a day ahead. So any time you’re ready, soup is on.

Summer Pea Soup with Mint
This warm-weather starter is great hot or cold
It’s summertime where we live, and that means garden-fresh produce. We’re starting to harvest from our own backyard, and the stalls at our local farmers’ markets are overflowing.
This time of year, one of our favorites is sweet peas. When freshly harvested, they barely need cooking. And this is one veggie you want to eat as soon as possible after it’s picked. Wait too long and the flavor starts to fade.
But even if you don’t have fresh peas available (likely, because their season is far too short), you’re still in luck—they freeze extremely well. What you buy in the frozen-food aisle can often be as good as (sometimes even better than) what you find in the produce section.
Fresh or frozen, sweet peas taste great in this minty soup. So what the heck, go ahead and use frozen. Your guests will think you slaved away in the kitchen, shelling mounds of fresh pea pods. We won’t tell.

The Brandy Smash Cocktail
The Mint Julep’s little brother
Long ago, in a century far away, the Brandy Smash was America’s most popular mixed drink. During the 1850s and 60s, drinkers flocked to this mint-infused charmer. But then (as so often happens with cocktails), it fell from favor.
Well, it’s about time for a revival, don’t you think?
A Brandy Smash is basically a shorter, less elaborate version of a Mint Julep. It’s easier to make than a julep, and (usually) contains less booze. And because it’s a smaller drink, it’s perfect for times when you want a refreshing tipple, but don’t have all afternoon to enjoy a long, slow sipper.
You don’t even need to use brandy in this drink if you don’t want to. Just substitute whiskey or gin—or almost any spirit that catches your fancy.
And the flavor? Smashing.

Chipotle Cherry Salsa
Spicy and a bit sweet . . . great with chips or as a sauce on meat or fish
Fresh cherries? Yum! Their sweet flavor makes for such wonderful pies, tarts, and other dessert goodies.
But, hey, cherries can do savory too. As this recipe shows.
Just combine cherries with spicy chipotle and jalapeño chilies in a rich salsa. The result? A tasty and versatile dish that fits in anywhere. Serve it as a first course with chips. Or use it as a sauce to accompany pork, fish, or chicken.
Best of all, Chipotle Cherry Salsa is simple to prepare. And with peak cherry season upon us in much of the US, now is the perfect time to try it.

The Mint Julep
This Cooling Cocktail is Traditional for Kentucky Derby Day
The Kentucky Derby is among the most famous horse races in the US (and part of the Triple Crown Series that also includes the Preakness Stakes and the Belmont Stakes). Traditionally held the first Saturday in May, it’s the first big US race of the season. Although the horses run for only a few minutes (the course measures 1¼ miles), most of those who attend make an all-day party of the event.
While all sorts of beverages typically are on offer, the Mint Julep is “the” drink at the Kentucky Derby. This ice-cold cocktail traditionally is served in a silver cup — which the imbiber holds by the bottom and top edges in order not to disturb the frosty coating of condensation that develops on the outside. I’ve never felt the need to invest in silver cups just to serve a Mint Julep, so I generally use an Old-Fashioned (rocks) glass instead. A Collins (tall) glass also works well.
Even if you aren’t traveling to Churchill Downs this weekend to attend the Kentucky Derby, you can still relax and enjoy this cool and refreshing drink. In the northern hemisphere, warm weather has finally arrived, so we can celebrate it with this cooler. In the southern hemisphere, you may be enjoying the last warm days before winter arrives, so what better way to say goodbye to summer than with this refreshing drink?
And you don’t need a silver cup. Really.

Moroccan Orange and Radish Salad
Serve this Fragrant Dish as a Starter or Side
In my local markets, California navel oranges are plentiful, inexpensive, and of excellent quality. In fact, their peak season runs from February through April, so we’re now getting them at their sweetest and most succulent. I’ve been feasting on citrus all winter — peeling and eating it for breakfast, snacks, and desserts. But with warm weather arriving, it’s time to use oranges in salads.
Enter this Moroccan Orange and Radish Salad. It combines sweet oranges with peppery grated radishes — and then douses everything with aromatic orange blossom water. That may sound a bit odd, but the combination works extraordinarily well.
You can serve this dish as either a starter or a side (it goes great with grilled meats or barbecue). And because it’s sweet (with a hint of spice), you could even get away with serving it as a savory dessert.
So think of this as three recipes in one. You can’t get any more versatile than that!

The Stinger Cocktail
Crème de Menthe Puts the Tingle in This 1920s Society Favorite
You don’t hear much buzz about The Stinger these days. But a few decades back, it was all the rage. Indeed, in 1920s New York, the Stinger was the “it” drink. It was a particular favorite of the limousine set — and Reginald Vanderbilt’s preferred drink.
Vanderbilt — known as “Reggie” to his friends — was then a society heavyweight and heir to the Vanderbilt railroad fortune. Today he’s largely forgotten, but you may have heard of his daughter, Gloria, who once designed a mean pair of jeans.
Anyway, legend has it that during the daily cocktail hour — liberally defined chez Vanderbilt as 4 to 7 PM — Reggie would stand behind his ornate home bar and dispense Stingers to all. Though the cocktail originated as a sweet after-dinner drink, by the time Reggie was mixing ‘em up, the Stinger had lowered its sugar quotient, and thus seemed appropriate for pre-dinner sipping.
Alas, Reggie is no longer here to mix cocktails for us (he died at age 45 from cirrhosis). But you’ll find the Stinger easy to make. And with its minty flavor, it’s a natural for the winter holidays.

Mojito Cocktail

The Mojito is one of the trendiest drinks of the past decade. And no wonder. This refreshing cocktail packs a lot of flavor and pleasure into each tall, cool glass.
The Mojito is a volume drink that takes a while to consume. And sparkling water helps dilute the alcohol quotient. So it makes an excellent thirst quencher for a long, hot summer afternoon. You can have two — and still keep your wits about you.
It’s also exceptionally easy to make.
